A graduate of one of Peru’s top culinary programs, Luis Eduardo Mora Vargas embarked on his professional journey at just 20 years of age. During his five years in Peru, he honed his skills at esteemed establishments such as Mo Bistro, Barra Lima, and collaborated closely with renowned chef Rafael Osterling at RAFA Restaurante and Mercado Restaurante. These formative years profoundly influenced his culinary approach, blending local flavors with a global perspective.
His tenure as Head Chef of Brazil’s Imakay led the restaurant to be awarded a Bib Gourmand by the prestigious Michelin Guide before he transitioned to Dubai, where he has spearheaded the culinary identity of Ren. Chef Mora’s passion for combining the vibrancy and heat of Latin American food with the elegance of Japanese cuisine has inspired Ren’s dynamic menu, one bursting with bold and unique Nikkei flavours.
Outside of the Ren kitchen, Luis enjoys soccer, exploring new restaurants and overseeing the farm-to-table culinary menu at Finca Brisa Pura (Pure Breeze Farm) in Costa Rica. His commitment to continuous learning and inspiration from diverse culinary traditions fuels his drive for innovation on the plate, while his leadership in the kitchen and dedication to creating exceptional dining experiences have earned him a reputation as a forward-thinking chef.
Each dish at Ren reflects Chef Mora’s extensive expertise, gained through his years of experience in Peru, Costa Rica, and beyond.
